Hi. 

I am a chef in Upstate New York (Adirondacks).  There are great restaurants and great chefs  that run them all throughout this area and like many of them, I found myself without work in the middle of a world pandemic and my plans for buying a restaurant seemed to look bleak.  What to do? I have a many of years of experience as a professional chef and I have learned so much along the way.  So I took a leap and started this blog.

    What you'll find here is pro-tips, tried and true recipes and some just on a whim dishes that I have created and collected and some new ones.  I will share scratch cooking tutorials and information on everything from building a pantry ,where to source ingredients, things to make for gifts, ideas for making a meal with "nothing", things to make when you have everything (including time) and food for when you don't have time and all other "kitchen scratch".

     As mentioned we have a great small community of restaurants and chefs and I hope to share some of their food with you as well!

     I live in a small town in the Adirondacks with my fiance, two dogs, cat and now chickens.  I am both a classically trained chef with a lot of prior training from mom and grandma. I love making food from scratch and most of the time shoot from the hip and scratch down a quick how to.  In my spare time I love gardening, fishing, working out shout out to Sydney Cummings You Tube Channel, yoga, beer, margarita's, and spending time with my fiance, animals and family.

    This is all new for me so I will do my best navigating the blogging waters and try to respond to every comment and email I receive.  I will be taking you on the journey as I learn how to take quality food photos and photos in general (with a smart phone). Sorry in advance- any feedback is encouraged (be nice). All recipes, ideas and photos are my own unless otherwise mentioned.
