Homemade Granola

You won’t look at boxed cereals the same way after you have made your own.

  • 4 cups of oats (steel cut, quick, any that you have)

  • 3/4 cup walnuts (you can use almonds, cashews, pistachios, pecans...you get the idea) cut into small pieces

  • 3/4 cup toasted unsweetened coconut flakes

  • 1/4 cup coconut oil

  • 1/4 cup honey

  • 1 teaspoon vanilla extract

  • 1 teaspoon of ground cinnamon

  • 1 teaspoon of kosher salt

  1. Preheat your oven to 325 degrees F

  2. Add the coconut oil and honey into a small pot and heat on a medium heat until it starts bubbling

  3. While the oil and honey are heating up, mix the oats, nuts, coconut flakes, salt, and cinnamon in a large bowl

  4. Once the oil/honey mixture starts to bubble, add the vanilla extract to it and pour it over the oats

  5. Mix everything well to ensure that the oats mixture is properly coated with the oil/honey

  6. Place in a 9 x 13" baking dish and bake for 25 minutes. Then stir the mixture and bake for another 25 minutes

  7. Let cool completely and store in an airtight container

Happy eating!

It's so easy and convenient to just buy a box of cereal at the store, isn't it? Well, I am here to show you my delicious breakfast granola recipe that is super simple to make, only takes a few ingredients, and will keep you full throughout the morning. I don't like it too much when people say, "You can add anything you want, just make it yours!" But in this case, the recipe is more or less just a template. If you like dried fruit, add it! If you like chia seeds (everyone is supposed to love chia seeds), go ahead and throw those in too! This is just my simple but delicious version and you can experiment with what you like!
