Homemade Mayo

 

Is there a better condiment than a homemade mayo? I think not.

 
Thanks to Kenji Lopez-Alt, making your own mayonnaise at home only takes about 2 minutes. I absolutely love mayonnaise! I am well aware that this is a divisive topic, but on Kitchen Scratch we are big fans of this creamy condiment. Especially when it's homemade.
 
 

WHAT YOU NEED

Special equipment:

  • Immersion Blender

Ingredients:

  • 1 egg

  • 1.5 cup canola oil

  • 1.5 tbsp Dijon mustard

  • 1.5 tbsp freshly squeezed lemon juice

  • salt and pepper

HOW TO DO IT

  1. Add all of the ingredients into a vessel that is just large enough to fit the head of your immersion blender

  2. Emulsify until thick and creamy mayonnaise is stabilized - this will take about 10-20 seconds

  3. Enjoy on absolutely everything!
