Weeknight Chicken Fried Rice

 

Super simple and super delicious. Totally customizable and always amazing.

 

WHAT YOU NEED

  • 1 cup of uncooked rice (I used white, but you can use your favorite rice here)

  • 12 ounces of boneless/skinless chicken breast (1 large breast)

  • 3 eggs

  • 1 large carrot

  • 1/2 cup of broccoli

  • 1/4 cup of diced onion

  • 1/4 cup of frozen peas

  • 1 large garlic clove

  • 1 tablespoon soy sauce

  • salt, pepper, olive oil

HOW TO DO IT

  1. Cook the rice according to instructions

  2. Cut all of the vegetables and chicken to the same sized pieces

  3. Put a saute pan on high and add a little bit of olive oil

  4. Once the oil is hot, add the chopped carrot, broccoli, and onion, season with salt and pepper, and saute until slightly soft but still with a good bite to the carrot - about 5 minutes. Add the garlic and saute for 1 minute, be careful not to burn the garlic.

  5. Remove the vegetables from the pan, add a little more oil, and add the chicken. Season with salt and pepper and cook until the chicken is no longer pink

  6. Add the vegetables and cooked rice into the pan, and mix everything well. 

  7. Make a well in the center, and crack the eggs into it. Scramble the eggs, and mix everything together. 

  8. Add the peas (I don't like them mushy, so that's why I add them at the end) and the soy sauce, and mix well.

  9. Taste for any adjustment of seasoning and serve.

But you can make quick and delicious meals at home in 30 minutes - and I am going to show you how. This is my recipe for a quick weeknight meal that is as adaptable as it is delicious. It requires a little bit of preparation work, but once everything is ready, it comes together very quickly. And I love the combination of quickly sauteed vegetables with chicken. This recipe easily feeds four people, or you can feed two and have some leftovers for lunch. One of the big things I would like to emphasize with this blog is that I am not using some obscure ingredients no one has ever seen or tasted. I am a just a regular guy who loves cooking, and I will show you that it doesn't take anything special to be able to make good quality delicious meals at home. Enjoy!
